everyone had these for tea time today--

carrot cake cupcakes with cream cheese frosting

i have been wanted to try and bake this type of cake for ages. you know... i always like the one by secret recipes. the bad thing was i have always thought that it contains quite a number of ingredients hehe... now you know that i am a bit lazy there... hah!

i was so damn happy last night when suddenly i found a simple carrot cake cupcake recipe here, while browsing the net. so for sure i didn't wait no more-- printed the recipe right away and decided to bake it today. what when the recipe mentioned that it produces moist miniature carrot cakes owh... who could resist that right? the cupcakes really moist, everyone love them! as usual we even shared some with our long time punjabi neighbour. i just hope that they like it too. i decorated the cupcakes with cream cheese frosting hmm... yummy!!!...

here's the recipe--

ingredients

• 2 cups all purpose flour
• 2 cups sugar
• 3 cups finely shredded carrots (a food processor is great for this)
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1 teaspoon ground cinnamon
• 1 cup vegetable oil
• 4 large eggs

directions

preheat oven to 350 degrees. line cupcake pans with paper liners if desired.

combine all dry ingredients in a large mixing bowl. mix at low speed for 30 seconds,

scraping bowl constantly while mixing. mix at high speed for 3 minutes, scraping bowl every minute.

pour batter into cupcake liners until they are 1/2 to 2/3 full.

bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.

cool 10 minutes in pans then move to wire rack to cool completely.

i do happily intend to share some of the recipes that i have tried, found online etc. but sorry to say that i can't share my butter and chocolate cake/cupcakes and buttercream frosting recipe, as that's my secret! ;)
to tell you the truth-- i didn't go for any professional cake making courses in the first place. all that what i have done so far were based on some trial-and-error-basis. you can always find the recipes online. there are so many baking sites with recipes out there. tqsm for the understanding.

Sunday, December 16, 2007 red velvet cupcakes...










...topped with cream cheese frosting. its sooo yummy, that not just kids love them, but adults too! recipe found from here.

it was my first time baking red velvet cupcakes. previously i always saw pictures of them in my flickr cupcakes group. i could say that i have been sooo eager to try it one day. so here we are, on my mom's 59th birthday, no birthday cupcakes, but only this. i am gonna bake birthday cupcakes tonight anyway for puteri and my sis' birthday tomorrow.

eventually who ever came to me would say this-- "hah?!!... its sooo... red!!!", thats include both puteri and megat, and my sister hehee... yes she's here, since we came back from kl that sunday night, after watched the jazz show of live & loud '07 on a friday.

btw back to the 'red colour cupcakes', normally only cupcake bakers are aware about this type of cupcakes ;) like i said earlier, adults love it too including me! its sooo yummy... especially when the cupcakes really blend well with the cream cheese frosting. it was my first time making that type of frosting too. lurve it! it was very nice. even my cousin sarah whose also a doctor, ate the whole thingy with no worries at all of her diet :P

i have been dying to try this recipe from the book 500 cupcakes & muffins by fergal connolly. it taste good... and hmm... whats more when the hershey's chocolate chips i used in the cupcakes melted... it make the cupcakes kinda moist, just like the moist chocolate cake. yummy... i guess thats why i read somewhere that we are advised to use a good quality chocolate to get the great taste! btw mom commented that it taste like a toothpaste lol...

i completed this after lunch, just on time for our tea time ;) so what about you people? what you had with your tea today?

this is again, from the book 500 cupcakes & muffin by fergal connolly. previously i tried peanut butter cupcakes. it was a hit i tell you. it finished by afternoon, the following day. take note that with a stick of butter, i can make an approximately more than 2 dozens of cupcakes. owh!... i so lurve this book, wait till i try more and more recipes.

in fact this morning i baked cookies & cream cupcakes. so when we say cookies and cream, its always synonym with oreo cookies! thus... i guess we could also called it oreo cupcakes. besides not just my kids, i love it sooo much too! we have all tried it. although its sooo sweet but we love it hmm.... yummy!!!... you could see it from megat's expression (right pic). especially puteri
and megat, whose eaten more than 3 pieces. yes! you read it right. they have ate 3 or more. after i snapped megat's pic, he told me that he wants to bring 3 of them to school tomorrow, for him to share them with his best friends. "you always make me proud mama!", megat told me ;)

its been a week since our premise is (temporarily) closed for some renovation works. thus... i decided to bake this peanut butter cupcakes for tea time, just before i fetch puteri from school. so we dropped by a mini supermarket in town to buy butter right away!

i followed the recipe from the book 500 cupcakes & muffins by fergal connolly. its yummy i tell you, no matter with or without the peanut butter icing. at first i thought of making some swirls like what the book suggested. unfortunately the crunchy peanut butter i was using got a lil' bit of peanuts. but although its tiny, i still didn't manage to do it. besides that, the icing was a bit soft and creamy. at last i just spread it out onto the cupcakes ;)

Saturday, May 19, 2007 chocolate surprise cupcakes

i baked this early in the morning, to try out this recipe that i found at all recipes. guess what people. i took my shower as soon as i awoke at 5.30 am, then i headed straight to the kitchen. i was kinda excited and cannot wait to bake this, cuz when i first read the recipe, i thought that it was an easy one. true! wonderful! its kinda moist and creamy. please note that even by the time i post this, my mom ate three already! btw i tried to add-up butter cream frosting on top for the fun of it. at the same time, i was trying out my skills in making the swirls hehe... (alright, what do you think of the swirls? i juz thought that it looks a lot better than my previous one of course). surprisingly, its blend nicely with the cake when eaten together ;)

one thing. this recipe do not use butter, just like the banana chip muffins i baked last month. what a co-incidence huh?!! its not that i simply wanna find a recipe without butter :P

Thursday, October 05, 2006 chocolate cupcakes (again?)


yes, we baked chocolate cupcakes again. but this time we use ladan miller's recipe as submitted in all recipes site. these were quick and easy to make, wonderful! from a glance, we could find that both were almost the same. well if you asked me, i would prefer this one better than the previous one. this one came out moist with good flavour, and a bit chewy, not too sweet. i also doubled the recipe and made about four dozens! i know this is too much. my kids requested it because they love chocolate so much. i will for sure bake this again and again.

anyhow, isn't it good we shared some with other people especially during this ramadhan month? that's what i did. i gave some to our punjabi neighbours and other relatives too.

omigosh... the clock just stroked 1 am and i am still here lol... well we have just baked 'chocolate cupcake with butter icing'. like the previous one, this one's for sahur too.

actually we followed the recipe of chocolate walnut cupcake with chocolate icing by betty saw in her book tempt, cupcakes to excite. walnuts not available at home so we baked it our way. besides
it’s only supposed to be for decoration items only.

you know... when things happened at the last minute, we tend to create something else instead right ;)

we baked this for breakfast this morning. we got the recipe from tempt, cupcakes to excite by betty saw. megat loves it so much that he asked us to bake more of this tonight ;)

well not just megat but my mom loves it too. i guess maybe because the 'surprise' was the strawberry filling. not forgetting fresh milk too that makes the cakes look yummy hmm...
