i have been wanted to try and bake this type of cake for ages. you know... i always like the one by secret recipes. the bad thing was i have always thought that it contains quite a number of ingredients hehe... now you know that i am a bit lazy there... hah!
i was so damn happy last night when suddenly i found a simple carrot cake cupcake recipe here, while browsing the net. so for sure i didn't wait no more-- printed the recipe right away and decided to bake it today. what when the recipe mentioned that it produces moist miniature carrot cakes owh... who could resist that right? the cupcakes really moist, everyone love them! as usual we even shared some with our long time punjabi neighbour. i just hope that they like it too. i decorated the cupcakes with cream cheese frosting hmm... yummy!!!...
here's the recipe--
ingredients
• 2 cups all purpose flour • 2 cups sugar • 3 cups finely shredded carrots (a food processor is great for this) • 1 teaspoon baking powder • 1 teaspoon baking soda • 1 teaspoon ground cinnamon • 1 cup vegetable oil • 4 large eggs
directions
preheat oven to 350 degrees. line cupcake pans with paper liners if desired.
combine all dry ingredients in a large mixing bowl. mix at low speed for 30 seconds,
scraping bowl constantly while mixing. mix at high speed for 3 minutes, scraping bowl every minute.
pour batter into cupcake liners until they are 1/2 to 2/3 full.
bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.
cool 10 minutes in pans then move to wire rack to cool completely.
kuE's note: i do happily intend to share some of the recipes that i have tried, found online etc. but sorry to say that i can't share my butter and chocolate cake/cupcakes and buttercream frosting recipe, as that's my secret! ;) to tell you the truth-- i didn't go for any professional cake making courses in the first place. all that what i have done so far were based on some trial-and-error-basis. you can always find the recipes online. there are so many baking sites with recipes out there. tqsm for the understanding.
i have been longing to try to bake this type of cookies... so i googled for a simple one. eventually i found a recipe thats kind of easy and not much ingredients to use here. mother and grandma ate some as soon as the cookies came out fresh from the ovens. they are my real testers hehe...
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup butter, room temperature
1/2 cup peanut butter
1 egg
1 1/4 cup flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
cream the butter for 2 minutes. add the sugars, cream for 2 more minutes. mix in the peanut butter and egg. mix together the dry ingredients - flour, baking soda, baking powder and salt. stir into the sugar butter mixture.
wrap dough in plastic and refrigerate at least 3 hours.
preheat oven to 375°F. shape dough into 1 1/4 inch balls. place about 3 inches apart on ungreased cookie sheet. flatten in crisscross pattern with a fork. Bake until light brown, 9 to 10 minutes. cool on baking sheets for a minute; transfer to rack to cool completely.
makes about 2 dozen cookies (i got mine of about 50 pieces).
for chewier cookies, bake at 300°F for 15 minutes (i did this, thus it was right!).
