last night i found out that we have bananas in the kitchen. so i thought that it should be good for something nice and simple. as usual, i logged-in to all recipes.com, one of my favourite cooking site and searched for 'banana'. it was really easy i tell you. more easy when you do not have butter in the house, but craving to eat some muffins! because this one used vegetable cooking oil instead.

i didn't omit anything, followed the recipe all the way through. baked them this morning for kids' breakfast, before they went to school. its awesome! they even asked me to pack some for them to eat during their recess time.

oh yes... as soon as puteri came down from upstairs, she said that the muffin smells like 'cucur kodok', a traditional kuih. hehe... of course dear, as it also has been made from a cup of mashed bananas ;)

so here's the recipe of banana chip muffins I by anne williamson--

original recipe yield: 1 dozen muffins

PREP TIME 10 Min
COOK TIME 25 Min
READY IN 35 Min


ingredients

* 1 3/4 cups all-purpose flour
* 1/2 cup white sugar
* 1 tablespoon baking powder
* 1/2 teaspoon salt
* 1/2 cup semisweet chocolate chips
* 1 egg
* 1/4 cup vegetable oil
* 1/4 cup milk
* 1 cup mashed bananas

directions

  1. measure flour, sugar, baking powder, salt, and chocolate chips into a large bowl. mix thoroughly, and make a well in the center.
  2. beat the egg in a small bowl until frothy. mix in cooking oil, milk, and bananas.
  3. pour mixture into the well. stir only to moisten. batter will be lumpy. fill greased muffin cups 3/4 full.
  4. bake at 400 degrees F (205 degrees C) for 20 to 25 minutes.
