Sunday, April 29, 2007 cupcakes for the newly-wed cousin


i was busy for a trip to damai laut and some jobs to be done there. don't forget to check back my main blog for the updates. anyhow we still squeeze-in some time to prepare cupcakes for my newly-wed cousin charlie and his wife before we go. they were here for another wedding reception in kuale yesterday.

we baked those cupcakes on friday night. then we kept them in some air-tight containers and placed them in the fridge. i asked mom to take it out this morning, then cool it down at room temperature. the cupcakes were just nice to have it during lunch today at home, before they went back to kl. hmm... guess what people. not enough of eating our cuppies here, they even 'tapau' some back to kl lol... while yat took back the whole plastic container with the 'C&H' initial (refer above pics: below left).

and here's a pic of part of our newly-added-extended family. pic also showed charlie there who was taking pics of our cuppies, watched by yat. oh yes... i brought some to damai laut yesterday you know. and we were glad that they all love our cuppies so much!!! ;) in fact they also asked us about the pricing already. wahhh!!!... how ler...

tomorrow is thursday, also a public holiday for the country. for those who dunno, its inconjunction with the installation of the sultan of terengganu, sultan mizan zainal abidin as malaysia's 13th yang di-pertuan agong (king).

thus we decided to bake surprise cookies, a kids' cookie recipe by martha stewart. more over we haven't bake cookies for quite some time already. i have tasted one juz now and hmm... its yummy... and of course, sweettt ;)

as you could see, the cookies were topped with chocolate frosting. while the surprise was the marshmallow, that was actually covered with chocolate frosting. great!



and here's the recipe...

1 3/4 cups all-purpose flour
3/4 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1 cup sugar
1 large egg
1/2 cup milk
1 teaspoon pure vanilla extract
12 large marshmallows, cut in half horizontally

  1. preheat oven to 375 degrees;. in a medium bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside.

  2. in the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar until light and fluffy, about 2 minutes. add egg, milk, and vanilla, and beat until well combined. add reserved flour mixture; mix on low speed until combined.

  3. using a tablespoon or 1 3/4-inch ice cream scoop, drop dough onto ungreased baking sheets, about 2 inches apart. bake until cookies begin to spread and become firm, 10 to 12 minutes.

  4. remove baking sheets from oven, and place a marshmallow, cut-side down, in the center of each cookie, pressing down slightly. return to oven, and continue baking until marshmallows begins to melt, 2 to 2 1/2 minutes. transfer cookies to a wire rack to cool completely before frosting*.


*chocolate frosting for surprise cookies:

2 cups confectioners' sugar
4 tablespoons (1/2 stick) unsalted butter, melted and cooled
1/4 cup cocoa powder
1/4 cup milk
1/4 teaspoon pure vanilla extract

  1. place confectioners’ sugar in a medium bowl. whisk in butter and cocoa powder. add milk and vanilla, and whisk until well combined.

  2. spread about 1 tablespoon of frosting over each marshmallow, starting in the center and continuing outward until marshmallow is covered.

i was browsing thru cupcake pics on flickr when i stumbled into this pic in one of the groups i joined. cute kan? its the new cupcake boxes at starbucks.

hmm... if you are clever enough you might have guess what's in my mind hehe... ;) as soon as i saw this earlier, i immediately thought of asking boxes supplier whether they would do such thing specially for me :D if yes, for sure it would be the best cupcake packaging on earth. alright whatever it is we'll see how it goes...

Thursday, April 19, 2007 help/opinion needed

we immediately baked cupcakes as soon as we awoke +/- 8.30am today. it was a public holiday -- sultan's birthday. we left home for sitiawan around 1.45pm. we headed straight to my cousin karina's place. it was his son amir's birthday party. there were so many guest from far and near. but karina's mom kept the cupcakes aside. she told me that she would only open the boxes after the guest left.

so when we left, cousins from ipoh were still there. they were expecting to try my cupcakes before they go back. some of them already asking me of how much am i selling those cupcakes. karina's mom (my auntie) advised me to sell them with a resonable and appropriate prices.

i am still in the mid of thinking of how, when, should i or shouldn't i start to do this cupcake business ;) i even still can't figure out of how much should i sell them, since people already asked. what say you?

Monday, April 02, 2007 our trademark

we baked quite a number of cupcakes over the weekend. i pipe-out the same pattern that i did last time. i love it so much that it will be my favourite i guess. its like some kind of lace pattern. puteri comment that its also gonna be like our trademark cupcakes already. well, what do you think.


the pink one, for a staff' sister's engagement on saturday.



while the green one for my young auntie's wedding on saturday too (S&R was short for shahrizat & rahmat).
