one of my favourite books recently is this one that i bought in penang early of the month. i never feel bored flipping through the pages, looking at the colourful pages of cakes and cupcakes many times...



thus, the book inspired me to bake some cupcakes today to make these...



we were just kinda practising for megat's birthday party that gonna be held next month. we thought of doing the baking ourselves this time, that would be more meaningful.

Thursday, May 24, 2007 cupcakes for teachers










megat's school is celebrating teacher's day tomorrow. they were late in this cuz the students were having exams the whole of last week. so as usual megat will bring a home-made gift for his class teacher (left pic), along with a card (written in mandarin) that he bought the other day in ipoh. last year i baked shortbread biscuit. as you could see this time i baked cupcakes!!!... i frosted the cupcakes with a simple swirl design (nozzle number 852), sprinkled with coloured glitters. i guess its not that bad. my skills should be improved after some practice' ;)

while the 25 pieces cupcakes (right pic) are for me to bring to my former primary school tomorrow night. there will be a farewell dinner for one of the assistant headmistress who is retiring. since i am the pta's vice president, the school invited me too.

i baked this early in the morning, to try out this recipe that i found at all recipes. guess what people. i took my shower as soon as i awoke at 5.30 am, then i headed straight to the kitchen. i was kinda excited and cannot wait to bake this, cuz when i first read the recipe, i thought that it was an easy one. true! wonderful! its kinda moist and creamy. please note that even by the time i post this, my mom ate three already! btw i tried to add-up butter cream frosting on top for the fun of it. at the same time, i was trying out my skills in making the swirls hehe... (alright, what do you think of the swirls? i juz thought that it looks a lot better than my previous one of course). surprisingly, its blend nicely with the cake when eaten together ;)

one thing. this recipe do not use butter, just like the banana chip muffins i baked last month. what a co-incidence huh?!! its not that i simply wanna find a recipe without butter :P

Sunday, May 13, 2007 a very special one

my tears was running slowly when i saw this butterfly cake. its so special because puteri baked this all by herself for me i.e. 2-in-1 -- for both my birthday and mother's day. i would like to say thank you very much to my princess for the effort mwahh... mama luv u sooo muchhhhh!







kuE's note: puteri used the book decorating cakes and cupcakes by betty crocker that we bought recently, as a guide, for her to cut a round cake into a butterfly-shaped cake ;)

we stayed-up until +/- 2.30 am this morning. mom requested us to make some cupcakes for her to bring to kl for ayah chu's (whose also her elder brother) kenduri. the design was still the one like what puteri has described before as 'our trademark'. i love it very much though... its so simple and easy to make, yet very nice.

yes... you know who you are... told ya recently that copying others are definitely wrong. ya lar... if so that you like the cupcakes design and wanna try or do it, carry-on... but with conditions that you placed a credit for her the creator i.e. mentioned about it in your fotopages or whatever. do have the courtesy will ya?

last night i found out that we have bananas in the kitchen. so i thought that it should be good for something nice and simple. as usual, i logged-in to all recipes.com, one of my favourite cooking site and searched for 'banana'. it was really easy i tell you. more easy when you do not have butter in the house, but craving to eat some muffins! because this one used vegetable cooking oil instead.

i didn't omit anything, followed the recipe all the way through. baked them this morning for kids' breakfast, before they went to school. its awesome! they even asked me to pack some for them to eat during their recess time.

oh yes... as soon as puteri came down from upstairs, she said that the muffin smells like 'cucur kodok', a traditional kuih. hehe... of course dear, as it also has been made from a cup of mashed bananas ;)

so here's the recipe of banana chip muffins I by anne williamson--


"cake-like texture with the popular banana chocolate taste." (true)

original recipe yield: 1 dozen muffins

PREP TIME 10 Min
COOK TIME 25 Min
READY IN 35 Min


ingredients

* 1 3/4 cups all-purpose flour
* 1/2 cup white sugar
* 1 tablespoon baking powder
* 1/2 teaspoon salt
* 1/2 cup semisweet chocolate chips
* 1 egg
* 1/4 cup vegetable oil
* 1/4 cup milk
* 1 cup mashed bananas

directions

  1. measure flour, sugar, baking powder, salt, and chocolate chips into a large bowl. mix thoroughly, and make a well in the center.
  2. beat the egg in a small bowl until frothy. mix in cooking oil, milk, and bananas.
  3. pour mixture into the well. stir only to moisten. batter will be lumpy. fill greased muffin cups 3/4 full.
  4. bake at 400 degrees F (205 degrees C) for 20 to 25 minutes.
