everyone had these for tea time today--

carrot cake cupcakes with cream cheese frosting

i have been wanted to try and bake this type of cake for ages. you know... i always like the one by secret recipes. the bad thing was i have always thought that it contains quite a number of ingredients hehe... now you know that i am a bit lazy there... hah!

i was so damn happy last night when suddenly i found a simple carrot cake cupcake recipe here, while browsing the net. so for sure i didn't wait no more-- printed the recipe right away and decided to bake it today. what when the recipe mentioned that it produces moist miniature carrot cakes owh... who could resist that right? the cupcakes really moist, everyone love them! as usual we even shared some with our long time punjabi neighbour. i just hope that they like it too. i decorated the cupcakes with cream cheese frosting hmm... yummy!!!...

here's the recipe--

ingredients

• 2 cups all purpose flour
• 2 cups sugar
• 3 cups finely shredded carrots (a food processor is great for this)
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1 teaspoon ground cinnamon
• 1 cup vegetable oil
• 4 large eggs

directions

preheat oven to 350 degrees. line cupcake pans with paper liners if desired.

combine all dry ingredients in a large mixing bowl. mix at low speed for 30 seconds,

scraping bowl constantly while mixing. mix at high speed for 3 minutes, scraping bowl every minute.

pour batter into cupcake liners until they are 1/2 to 2/3 full.

bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.

cool 10 minutes in pans then move to wire rack to cool completely.

i do happily intend to share some of the recipes that i have tried, found online etc. but sorry to say that i can't share my butter and chocolate cake/cupcakes and buttercream frosting recipe, as that's my secret! ;)
to tell you the truth-- i didn't go for any professional cake making courses in the first place. all that what i have done so far were based on some trial-and-error-basis. you can always find the recipes online. there are so many baking sites with recipes out there. tqsm for the understanding.

not me! believer it or not... many of the university of maryland students helped to set up the cupcakes, to celebrate the 10th anniversary of maryland day. check out the 50,000 cupcakes being set up here! *glurp*

i have been longing to try to bake this type of cookies... so i googled for a simple one. eventually i found a recipe thats kind of easy and not much ingredients to use here. mother and grandma ate some as soon as the cookies came out fresh from the ovens. they are my real testers hehe...

  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup butter, room temperature
  • 1/2 cup peanut butter
  • 1 egg
  • 1 1/4 cup flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

  1. cream the butter for 2 minutes. add the sugars, cream for 2 more minutes. mix in the peanut butter and egg. mix together the dry ingredients - flour, baking soda, baking powder and salt. stir into the sugar butter mixture.

  2. wrap dough in plastic and refrigerate at least 3 hours.









  3. preheat oven to 375°F. shape dough into 1 1/4 inch balls. place about 3 inches apart on ungreased cookie sheet. flatten in crisscross pattern with a fork. Bake until light brown, 9 to 10 minutes. cool on baking sheets for a minute; transfer to rack to cool completely.









makes about 2 dozen cookies (i got mine of about 50 pieces).

for chewier cookies, bake at 300°F for 15 minutes (i did this, thus it was right!).

hmm... i lurveeeee it!!! its really tasteful and chewy, nice... good to be eaten with milk later for tea time ;)

when i baked fek's surprise birthday cupcakes about two weeks ago, i just simply iced the extra cupcakes with buttercream frosting. then i sprinkled red colour sprinkles on top (ref pic below). puteri lurve it! she said that she likes that one better i.e. natural look (?) than the smooth type, which "looks sooo perfect" hehe...

so people tell me of which one do you prefer--

argghhh!!!... its been ages (?) since the last time i baked big cakes. as some of you people know, i am so into cupcakes! a primary school teacher called me on last monday to order a chocolate cake-- basically the most important thing was she told me that she wanted chocolate cake, and the rest i.e. colour, design etc., was "up to you"... hah! that was the difficult part. so here's the end result--

since there's no particular specs provided, i just did it my own way hehe... i decorated the side of the round cake with basket weave design that i learned from this site. that was in fact my second trial though. the first one was during last raya (see here).

i felt so relieved that everything turned OOOkay... *phew* the cake is now ready to be collected at 11am.

nothing to do on a sunday, suddenly felt to try a hand to bake these--

inspired by all the great cupcakes pics on flickr i.e. here. the frosting a bit soft this time, thus the not-so-nice-swirl 8)


look at how my nephew shahriman 'ate' the cupcake hehe... *slurp!* its as though he ate it like a real ice cream lol... :~)

as you could see people, earlier the kids dunno that i was baking these. it was a surprise for them you see. i was just finished baking, when shahriman arrived at noon with his grandparents and brother didin. so i quickly kept the ice cream cone cupcakes in a plastic container and hide them.

i only made the buttercream frosting when it was time for tea. kids were busy watching tv. once i have ready and placed the cupcakes nicely on a plate with doily paper, i called them. they were like-- "ahhhhh..." and "ohhhhh..."

don't you people think that this is great to be served for a kid's birthday party?
